Gruyere Beignets


1 pinch Salt
1 pinch Sugar
1 Egg Yolk
¾ cup Charismatic Fool, sparkling rose
1 ¼ cups A.P. Flour, sifted
4 ounces Gruyere, diced
1 bunch Chives, minced
2 Egg Whites
Grape Seed Oil for frying

Method: ◦In a small bowl place the salt, sugar, and flour.
◦Make a well.
◦Pour the Charismatic Fool and add the egg yolk to the middle of the well.
◦Slowly whisk to combine.
◦Cover with plastic wrap.
◦Place somewhere warm for a half-hour.
◦Fold in the gruyere and chives.
◦Whip egg whites to a firm peak and fold into the batter.
Fry @ 350 degrees.
